This Quinoa and Black Bean Salad is Sure to Please Your Taste Buds

Enjoy this healthy and delicious salad as a side dish or a main course, and you are sure to make it again and again.

Ingredients

  • SONY DSC1 cup quinoa, rinsed until water runs clear
  • 2 cups chicken (or vegetable) broth
  • 1 15 ounce can black beans, rinsed and drained
  • 1 1/2 tablespoons red wine vinegar
  • 1 cup corn
  • 1 cucumber, chopped
  • 1 red bell pepper
  • 1 small clove garlic, minced
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon chopped cilantro
  • 1/3 cup fresh lime juice
  • 1/2 teaspoon salt
  • 1 teaspoon cumin
  • 1/4 cup olive oil
  • 1 tablespoon agave nectar
  • 4 scallions, chopped
  • 1/2 jicama, cut in strips
  • 1 cup cherry tomatoes
  • 1 avocado

Instructions

Cook quinoa in chicken broth, following the directions on the package. Put in bowl, and let cool. Toss black beans with vinegar, garlic, salt and pepper to taste. Add beans, bell pepper, scallions, cucumber, corn, jicama, cayenne and cilantro to quinoa, and toss well. In a small bowl, whisk together lime juice, salt, cumin and agave, and add oil in a stream while whisking. Drizzle over salad, and toss well. Garnish with tomatoes and avocado.
