Grilled Blackened Salmon delicious with Citrus Chive Sauce

Grilled blackened salmonPlace 6 salmon filets, 4 ounces each, on work surface, and rub each side of filet with 1 tablespoon blackening seasoning.*

Citrus Chive Sauce

In a small bowl combine:

  • 3/4 cup sour cream

  • 3/4 cup mayonnaise

  • 1 tablespoon lemon juice

  • 1 tablespoon lime juice

  • 1 tablespoon fresh chopped cilantro

     

  • 2 teaspoons fresh chopped chives

  • 1 teaspoon white granulated sugar

  • 1 teaspoon kosher salt (optional)

  • 1/2 teaspoon black pepper

Place sauce in refrigerator to chill.

Blackened Salmon

Grilling Directions—Pre-heat grill to medium high heat. Grill salmon filets for 3 to 5 minutes per side or until internal temperature reaches 140 degrees.

Stove Top Directions—Spray skillet with non-stick coating, and place over medium-high heat. Cook salmon filets 3 to 5 minutes per side or until fish flakes easily with a fork and has an internal temperature of 140 degrees.

Serve with refrigerated Citrus Chive Sauce.

Seasoning

*Blackening Seasoning—yields 4 cups

  • 1 cup onion powder

  • 1 cup granulated garlic

  • 1 cup paprika

  • 1 cup Italian seasoning

  • 4 teaspoons kosher salt

  • 4 teaspoons black pepper

  • 2 teaspoons cayenne pepper

Store in an airtight container in a cool, dry place.

Serves 6. Serve with a chilled cucumber salad and brown rice. Spirited beverages are optional!
